Will the product FCR8008 material wrap around a 2inch x 6inch board enough to put staples in it.

I recommend using at least 11" Wide Carpeting # CE11330 for a 2"x6" bunk board. The 8" # FCR8008 would require you to place the staples on the edge of the bunk board where they are more likely to pull through the carpeting.
