Thanks for the all the info. For the brake assemblies you'll want part # K23-472-473-00. These are designed to mount onto a 4-bolt brake mounting flange, if your axles don't have a brake flange then it'll honestly be less expensive to just replace the axle than it would be to get a brake flange welded in place. If that's the case let me know and we can explore the available options.
The 8-436 does have a few different options but they all use Inner Bearing # L68149 and Outer Bearing # L44649 and from what I can see they all have a 5 on 4.5 bolt pattern. You'll want to double check the bolt pattern to ensure compatibility with your wheels, but I'm fairly certain that they're 5 on 4.5 with a 1/2" stud so you can use part # 8-247-50UC3. These hubs are galvanized to help reduce wear from the water. If you just want regular hubs you can use part # AKHD-545-35-K instead, but they'll wear more quickly.
You'll want to pick up some heat shrink butt connectors # DW05744-10 for the brake magnet wiring since you're backing into water and you'll need to pick up some marine grease # L74FR for your bearings.
I've attached a short video below where I'll walk you through the installation process with a trailer that I switch over from idler to a hub/drum setup with brakes. If you have any other questions then please let me know.
