So given the above size tire on my boat trailer I can use a Loadstar 205/65-10 tire and it will fit on my rims? Load range E AM 1HP 56?

I did some checking and the 20.5x8-10 tire size that you referenced is the same as 205/65-10 so the Loadstar K399 Bias Trailer Tire # AM1HP52 should fit well, but may not have enough capacity.
Since you have a load range E tire currently I would recommend you replace this tire with one with the same capacity. For that I would recommend the Loadstar K399 Trailer Tire # AM1HP56. This tire has a load range of E and should work well for you.
