What if I keep using my current rotors, bearing. Can I order the Disc Brake Caliper assemble with brake pads and the mounting flange/bracket? If so which one do you recommend?

I will answer you second question first. The difference between the three Kodiak Disc Brake Kit - 10" Hub/Rotor - 5 on 4-1/2" is the rotor finish. The differences are as follows:
part # K2HR35D, has a Dacromet coated hub-rotor
part # K2HR35DS, has a Dacomet and stainless steel coated hub-rotor
part # K2HR35DDKG, has a Dacromet and KodaGuard coated hub-rotor.
The brake kit with the Dacromet and KodaGuard will have the best corrosion resistance between the three. With regard to what brake is better between the Kodiak Disc Brake Kit. part # K2HR35DKG, With regard to which brake assembly kit is better, I think the Kodiak with the Dacromet and KodaGuard will resist rust and corrosion better.

I have 2003 521 Ranger trailer with a straight spindle with 10 rotors and UPC-DB 42 brake assembly with oil bath hubs. Wanting upgrade whole assembly to Kodiak Trailer Brakes - K2HR35DS Kit. Need Kodiak Oil Bath Hubs part number. Need seals and bearing part numbers that work with oil bath hubs?
