How much weight can these hold total across 2 bars? I would be mounting on a 2021 Jeep Unlimited with one touch roof.

I have a solution for you. Unfortunately, the Rhino-Rack Roof Rack Legs - Gutter Mount - 8-3/10" Tall - Qty 2 # RL210S2 will not fit your 2021 Jeep Wrangler Unlimited. The gutter mounts you need are two sets of the Rhino-Rack Roof Rack Legs - Gutter Mount - Qty 2 # RRRL110S5. The weight capacity of the gutter mount crossbar system on your 2021 Jeep Wrangler is 88 pounds.
If you want to complete your roof rack system on your vehicle, you will need two sets of RLTP Leg Adapters for Rhino-Rack Vortex Aero Crossbars - Track Mount - Qty 2 # RRVA-FK1 and the Rhino-Rack Vortex Aero Crossbars - Aluminum - Black - 59" Long - Qty 2 # RRVA150B-2. I confirmed with Rhino-Rack they the one-touch roof will not be able to operate while the crossbar system is mounted. Rhino-Rack does not make any roof rack system that will work with the one-touch roof.
