any reason why these wont work for a diy kayak ramp over some riprap?

I do not see any reason why the CE Smith Roller Bunks # CE27710 would not work for your kayak ramp. The frame has a thick 3-5mil galvanized coating that will provide years of protection without rusting or corroding. The heavy duty rubber rollers will not damage your kayak when it is slid up or down the ramp.
You will want to make sure that you can secure these properly. The CE Smith V-Wing Bolster Bracket # CE26244G may work to hold the rollers at the correct angle and width for your kayak.
