Question:
I currently have the Mazda OEM class II hitch on my 2018 CX-5 and am looking for a class III 2inch hitch. The current hitch sits higher about 14 3/4inch to the top of the hitch receiver see picture and the bumper has been cut out for it. Of the 2inch hitch options from etrailer is any certain one going to sit higher like my current hitch? What do you recommend? Also it looks like Im already wired for towing so any certain accessory I need to mount the wiring with a new hitch?

Out of all of the 2" trailer hitch receivers offered for your 2018 Mazda CX-5 I recommend the etrailer Trailer Hitch Receiver - Custom Fit - Matte Black Finish - Class III - 2" # e98902 as it offers the most ground clearance. When we installed this on a CX-5 we found that from the ground to the top inside edge of the receiver tube opening is 13-1/2" as shown in the included picture.
Since your CX-5 already has a 4-way connector, you can use the Curt Easy Mount Bracket for 4- or 5-Way Flat Trailer Connector - 2" Hitch # C58001 to mount it to your new 2" trailer hitch receiver.
To complete your towing setup you may also be interested in the etrailer Ball Mount Kit # 989900 which includes two ball mounts, two hitch balls, two hitch pins and clips, and a carrying case.
I included videos for each of the products mentioned for you to take a look at.
