Will the BAKFlip MX4 Hard Tonneau Cover - Folding - Aluminum - Matte Finish block the view of the gooseneck hitch view on the cargo camera?

For a tonneau cover to use with a gooseneck trailer the BAKFlip MX4 won't be your best option as it's either going to fold up against the back glass and block total view or it's going to fold down on the last panel and be thick enough that it would cause interference issues with the overhang of your trailer. In the picture I attached you can see it would block the camera as well.

A better option for your long bed 2021 Ford F-350 would be a retractable tonneau cover that stores down in a canister below the top of the bed rails like the Pace Edwards Switchblade # 311-SWFA19A45.
