Looking fir a hard bed cover that I can still use the fifth wheel hitch while it is retracted.

The Pace Edwards Switchblade part # 311-SWD7936 would be a great option and what I would recommend for your 2020 Ram 3500 long bed.
This is a retractable cover will easily cover your fifth wheel hitch when not in use and give you complete access to it by simply retracting it. In the picture I attached to this page you can see someone who had the same idea.
