The best trailer hitch option for your 2016 Honda Odyssey is the Draw-Tite # 76025 because of the concealed cross tube design that will keep it hidden and keep the factory look in tact. This hitch has a 2" receiver, so it will be able to handle the rigors of towing and it will also provide you with the best options in case you want to use it for a bike rack as well. The installation is a bit more involved, but it's worth it in my opinion since it will keep the cross tube hidden and your vehicle looking good.
There are some other parts you'll need to tow a trailer, including wiring, a ball mount and hitch ball. For wiring I recommend using the Tekonsha # 118521 since the Tekonsha converter boxes are shown to be a bit more reliable over time. To finish out your towing setup I recommend using the etrailer Ball Mount Kit # 989900 since it comes with multiple ball mounts and hitch balls to allow you to cover a variety of towing setups, plus hitch pin, clips and a carrying bag.
