Question:
Tow vehicle is a 1994 Chevy K2500. The trailer weighs 6,000 lbs loaded. The trailer frame is made with I-Beams which have 7.5 inches between the top and bottom lip of the frame and the lips stick out .75 inches. Attached is a picture of the I-Beam frame. I plan to weld a .75 inch piece of steel to the I-Beam to make the side flush and then either drill holes thru the I-Beam to mount the brackets or maybe weld the bracket to the steel piece added to the I-Beam. Will this work?

I do have an option for you but I can't recommend you weld the brackets of the Curt TruTrack Weight Distribution System part # C17499 to your i-beam trailer frame as this will not allow the system to function properly and it would be very difficult to line up the spring bars with the vehicle.
However, you will not need to weld the TruTrack brackets to the frame as there is a set of TruTrack brackets available that will work on trailer frames up to 8" tall and for that you will want to use the Frame Brackets for Curt TruTrack Weight Distribution System part # C17515. In order for these TruTrack brackets to then sit flush on the i-beam frame rail you could either weld a piece a steel like you mentioned to box the frame in or use a block of wood on either side.
