This looks like it slides onto the grey water tank in an RV and matches up to what I have, but what sealant is used to keep it from leaking and/or keep it attached to the tank?

To attach the Valterra Eccentric Tank Reducer # T1041-1 to the rest of the plumbing on the RV and prevent leaks use the Valterra ABS Solvent Cement # A05-0303. It was made for exactly this purpose!
