Question:
Is there a manual override in the landing gear just in case the motor goes out or the battery is dead?

Since the Ultra-Fab Deluxe Electric Landing Gear Set # UF17-943010 that you referenced does not have that shaft that connects both legs there is no manual override crank for the landing gear set. They are both controlled independently of each other for easier leveling.
I did speak to my contact at Ultra-Fab who said that in case of complete power failure you can remove the housing and there is a place where you can use a screwdriver to adjust the legs, but this will take quite awhile.
So, in short, there is no manual override crank, but there is a way to manually adjust them should the need arise (even though it's a slow process).
A review video and instructions have been linked for you to reference.
