I have a 2004 sunseeker model 3100 32ft ford 2003. What version of Sumo springs would use for front and rear?

Installing new suspension enhancement really depends on what you want to achieve. If you are lookign for help when you are towing then using suspension enhancement like air bags will help. But if you are looking for help when you are driving to control sway and make the steering easier I recommend sway control.
The feedback we get from customers is that they like the Timbren enhancement sytems more than the SumoSprings. The Timbrens I recommend for your Sunseeker are part # TFEF350 for the front and part # TFERSDLB for the rear suspension.
If you want to go with the SumoSprings the system I recommend for the front is part # SSF-A106-47 and for the rear I recommend part # SSR-106-47-1.
If you are looking to improve the stability and help maintain better control when in high winds or passing large trucks I recommend the Roadmaster Rear Anti-Sway Bar, part # RM-1139-147. We also offer a front anti-sway bar for your motorhome. It is the Roadmaster, part # RM-1139-115.
