I have a three axle electric over hydraulic braking system in area, airstream camper, and 2021 GMC 2500. What adapter can be used, given the fact that there are three axles, the wireless system would be the easiest if possible.

You could use the Hydrastar Electric Over Hydraulic Actuator Adapter Module for Ford and Chevy Brake Controllers # HBA-CAM if you wanted to use your factory brake controller, however if you wanted to completely abandon your factory controller the Curt Echo In-Line Wireless Brake Controller - Bluetooth # C79DR will also work great.
This brake controller is completely wireless so it'll use an app to monitor and set your braking power, is compatible with up to 4 axles, and is also compatible with electric over hydraulic brakes.
