I have been researching weight distribution hitches for my 2021 Micro Minnie 2108DS. The new Blue Ox TrackPro hitch is intriguing but I have been unable to find any customer testimonials. How does this compare to the Fastway e2? How is the noise level?

Both the Fastway e2 and Blue Ox TrackPro are going to provide your 7,000 lb GVWR 2021 Micro Minnie 2108DS with excellent leveling and sway control at the spring bars, but there are a couple of distinctions between the two.
First, let's just mention the correct system for your 7,000 lb GVWR trailer. You will first need to know your total tongue weight (TTW), which is the tongue weight of your fully loaded and ready to go trailer plus the weight of any cargo behind the rear axle of your tow vehicle. Tongue weight is typically between 10% and 15% of your trailer's GVWR, so for a 7,000 lb GVWR we can safely say which Fastway system is correct, the Fastway e2 Weight Distribution # FA92-00-1000.
This is because it is for TTW ranging from 600 lbs to 1,000 lbs, which your Micro Minnie will be within. The Blue Ox TrackPro has lesser ranges, so to get the right one you need to first weigh your loaded trailer's tongue weight with the etrailer Tongue Weight Scale # e99044.
For a TTW between 600 lbs and 800 lbs you will need the Blue Ox TrackPro Weight Distribution # BLU47FR.
For a (more likely) TTW between 800 lbs and 1,000 lbs you will need the Blue Ox TrackPro Weight Distribution # BLU87FR.
That is one of the main differences between the two systems, with the Fastway being easier in regards to knowing exactly what you need. While it has that advantage, the Blue Ox has the upper hand in regards to ease of use and install. The Fastway requires adding or removing washers to find the perfect angle for head tilt, while the Blue Ox does not; the adjustments are done at the spring bar brackets.
Another advantage of the Blue Ox is that it comes with a 2-5/16" hitch ball while the Fastway does not, and requires the 2-5/16" Hitch Ball # 63840 and it is recommended to use the Thin Walled Socket # EQ70-00-4800 for installation of the hitch ball.
You asked about noise, and due to the fact they use friction on the bars, both will make noise, there just isn't a way around that with this type of system. That said, overall, both will provide excellent sway control at the spring bars and will give you the leveling you need, but due to the easier installation and use, I recommend going with the Blue Ox TrackPro, with the right system dependent on your loaded weight.
