Absolutely not. You're going to be covered by the Magnuson–Moss Warranty Act. It states that manufacturer's cannot void the entire warranty of a vehicle simply because they installed an aftermarket component.
The Draw-Tite Trailer Hitch item # DT73RR you were looking at is confirmed to fit a 2021 Subaru Outback Wagon. This hitch is custom fit and bolts to your Subaru with included hardware.

If you are planning on towing you will also need a wiring harness item # C56040 and a ball mount kit item # C45534.
