Welcome back! Happy to hear you like the hitch. Since the crosstube on the Curt Hitch item # C13410 is hidden behind the rear bumper and plastic underbody trim you will need to use the Curt Easy Mount Bracket for 7-Way Trailer Connectors item # C58000. This bracket mounts directly to your receiver. It will prevent you from having to drill into your Subaru or have to cut trim to access the crossbar.
The Tekonsha Prodigy P3 item # 90195 is a great proportional brake controller. It activates your trailer's brakes in response to the same force your Subaru is decelerating. This brake controller includes the universal harness needed to connect to your Outback's wiring. There is no plug in adapter for your vehicle.
I have linked a couple of installation videos below.
