I am looking at the Anywhere Fat Tire E Trike but its width is 31.5. I cannot locate a cargo hauler wide enough to accommodate it. What suggestions do you have?

Due to the size and length of your Anywhere Fat Tire Electric Trike, there is not going to be a cargo carrier that'll accommodate your trike.
Instead, I believe the best option for you is to use a utility trailer, like the:
