I have 2x trailers that Id like to use a Weight Distributing hitch with - do the manufacturers sell the trailer plates as an accessory so I could have 1 hitch that works with both of my trailers?

Yes the weight distribution system manufacturers do offer replacement mounting brackets for their systems so that you could have one system that fits two trailers. For example the Blue Ox kit part # BLU87FR that you referenced has replacement mounting hardware with the part # BLU72QR.
