If I use this jack on a cargo trailer that does not have a battery, can I power it from the hot post in the truck trailer plug? I would hook up a 7-pin plug to the jack and plug it into the truck for power?

Yes you can splice in to the power wire on your (vehicle end) 7-WAY and that will work.
Or you could add a connector like the Bargman 7-Way, RV-Style Connector w/ 10' Heavy Duty Insulated Cable - Trailer End # 54006-059 to the connector on the Electric Jack w/ Footplate - Drop Leg - A-Frame - 25-1/8" Lift - 3,500 lbs - White EJ-3520-WBX and plug it directly into your truck's 7-way when using the jack. Then it will work for you.
We also have the Electric Trailer Jack - Drop Leg - A-Frame - 22-1/2" Lift - 3,500 lbs # 3370093500 that already has a seven way plug installed on it.
