The # 391CONVPT5L Stealth Hitch you'd looked at doesn't include the receiver that's designed for towing, it's meant for hitch mounted accessories only, but there are options that would allow you to tow your boat.
To tow your boat, there's a couple ways you can go to upgrade to make that possible. You could use the part # 391CONVPT5L hitch, add the # 391BMU5L ball mount and a # 63845 2-inch trailer ball and the # CU94FR 4-pole trailer wiring harness, which would provide you everything you needed to tow your boat.
Or, for another option you'd could use the Stealth hitch # 391HYUNPALIS19T which includes the ball mount for towing along with a 7-way trailer wiring harness. You'd also need a # PK12716 adapter for the 4 pole connector on your boat trailer. This would be more expensive than the first option, but if you wanted to tow something in the future that's equipped with a 7-way trailer connector, you'd be ready.
If your current trailer is all you'll ever tow, I'd stick with the first option. I've linked to install videos for the hitch and the trailer wiring harness.
