I have a solution for an adjustable ball mount that is compatible with the GMC MultiPro tailgate, but there is not one that has a specific 5" drop position. It appears you were looking at the B&W Tow & Stow for MultiPro Tailgates # BWTS20066BMP which has a 7" drop, and because this is a ball mount that adjusts in 1-3/8" increments, it will get you almost right to 5" drop when adjusted up one slot from the bottom.

This would be the best solution available for your GMC truck with a 2.5" receiver and MultiPro tailgate and the rise/drop that you're looking for.
