We have an impreza 2015 hatchback 5 door single exhaust and we are getting an electric bike that weighs 50 lb. We want to take the electric bike and one standard bike on the back of the impreza. we are told that we can only get a 1 1/4 inch hitch which I guess should be fine. I didn't know it could get so complicated. What rack would be best? And not the most expensive?

Your 2015 Subaru Impreza hatchback with a single exhaust does have a 2 inch hitch available, the EcoHitch Invisi Trailer Hitch Receiver # 306-X7211. This is a pricier option, so if you are looking for a budget-friendly rack and hitch combo, you will want to stick with the best 1-1/4 inch hitch, which for your Impreza is the Draw-Tite Trailer Hitch Receiver # DT24959.
This hitch has better ground and bumper clearances than the Curt Hitch # C11286 that also fits your '15 Impreza so you will want to go with the Draw-Tite. Since they are Class I hitches, you also need a Class I compatible bike rack, and keep in mind that bike racks able to carry heavy e-bikes are going to be a little pricier than those that don't need to carry as much weight.
The most economical bike rack available that is Class I compatible and has the weight capacity for your heavy e-bikes is the RockyMounts MonoRail 2-Bike Rack # RKY10003.
This is an easy to use rack that can carry bikes up to 60 lbs and offers excellent protection for them. It is a wheel-mounted rack so there isn't any contact with your bike's frame, and it also comes with a hitch lock to secure the rack to your Impreza and a cable lock to secure your bikes to the rack.
