I need a hitch that will give me the most ground clearance so can you tell me how much clearance will I loose with a 2inch and 1.25inch hitch. AND which of your hitch models or give me more clearance?

For your 2016 Subaru Crosstrek, the EcoHitch Invisi Trailer Hitch Receiver - Custom Fit - Class III - 2" # 306-X7203 has the best ground clearance and only fits vehicles with the center knock-out panel in the bumper.
The next best ground clearance is in the Draw-Tite Sportframe Trailer Hitch Receiver - Custom Fit - Class I - 1-1/4" # DT24959 which at the lowest point will give you 13 inches ground clearance. This is about an inch more clearance than the 2 inch # e98838 which will give you about 12 inches clearance but still more options like the EcoHitch for larger accessories.
