Question:
Im looking at a trailer that has anywhere from a 600-800lb tongue weight. GVWR is approximately 6,500 lbs. Would it create issues if I were to use the 12,000 lb, 1,200 tongue weight version even though its overkill?

If you go with a weight distribution system that is rated too high for the trailer being towed you'll end up with a really harsh ride quality. So based on knowing your tongue weight will be between 600 and 800 lbs the best Fastway weight distribution system is the Trunnion e2 part # FA92-00-1000 which has a tongue weight range of 600-1,000 lbs.
If instead you were wanting an Equal-i-zer the kit you'd want is the part # EQ37100ET which has the same weight range but has a better sway control setup as it's 4 point and not 2 point like the Fastway.
You will also need a thin walled socket to install the included hitch ball of either kit like the # ALL643216.
