You are correct that the different colors on the SumoSprings Custom Helper Springs like the # SSR-187-54-1 note the different densities of the springs; the yellow springs that you were looking at and are mentioned above are the stiffest compression strength springs available for your 2020 Coachman Mirada 32SS and are the best choice to help reduce the side-to-side sway you're experiencing.
For reference, the blue SumoSprings are for light duty applications, the black are designed for any application (light, medium or heavy) and the yellow springs are designed specifically for medium and heavy duty applications. The weight capacity on these is essentially, as you've mentioned when referring to the density, how much weight those springs will go to full compression under.
The steering stabilizer that you've decided to add will do a great job at correcting some of the road wander that you might be experiencing because of the sway but I have something else you might want to consider, as well.
Since we don't have a rear-sway bar available to fit your coach, upgrading the bushings would be a good choice to further help with the sway you're experiencing. If you have a 1-3/8" diameter factory rear sway bar you'll want to use the Roadmaster # RM-4139-300; for a rear sway bar with a 1-1/2" diameter you'll want to use the # RM-4139-125. Replacement bushings work with your factory rear anti-sway bar to improve the overall stability of your vehicle and because they're plastic they won't be too rigid for your coach.
