I am not totally sure which fifth wheel to gooseneck adapter you have but I am fairly certain it's the # CAB-C5G. In general when there's a stuck hitch/coupler situation the solution is to first soak as much of it as you can with penetrating oil like WD-40 or liquid wrench, let it sit for a while (possibly overnight if you can) and then attempt again. If the coupler is stuck on the ball what can help is if you use the jacks to slightly raise the trailer nose up a bit so that some of the weight of the coupler is off the ball. Sometimes that helps stubborn mechanisms release without the extra tension. You might try several jack positions to find the "sweet spot" which allows for this.
