I just bought a 2020 Trek Verve 3 and was thinking about purchasing the RockyMount carrier. I noticed that in one video a hatchback door got very close to a road bike pedal when it was opened. Will I have a clearance problem with the Verve 3? I will also be installing the Draw-Tite hitch, although if the Curt or eTrailer hitches will offer a little more clearance I wont mind reconsidering.

The trailer hitch for your 2016 Honda CR-V that will allow for the best bike rack clearance is the etrailer.com hitch part # E98868 which has a distance from it's hitch pin hole to the outer portion of the rear bumper of 3 inches. This beats the Draw Tite you were considering by 1-1/2 inches.
So the RockyMounts bike rack # RKY10007 that you referenced measures 12 inches from the center of it's hitch pin hole to the nearest portion of the rack. That means that with the hitch dimensions mentioned earlier you'd have 9 inches of clearance if you went with the etrailer.com hitch.
Beyond that it's hard to say if you'd have clearance to clear the pedal but most likely if it's close you can turn the pedal and you'll find that it can fit past it.
