I have two different tow vehicles and my SUV is significantly lower than my Ford F-350. I know I can replace the shank, however, I believe that would require that I remove the bolts and adjust anytime I switch vehicles. Unless, there are pins available that replace the bolts. Can I use High-Low Adapter to the weight distribution hitch when using my truck.

I do have the correct options for you but the Roadmaster High-Low Adapter part # RM-076 cannot be used with a weight distribution system. Since you have two vehicles with very different ground clearances you will just need to have two shanks, one for the truck with more drop and one for the SUV with less drop. The good news is that most weight distribution shanks are pretty universal so all I would need from you is the drop needed for each vehicle. This can be found by subtracting the distance from the ground to the top, inside edge of the receiver tube from the distance from the ground to the bottom of the trailer coupler while level.
For example, the Curt Adjustable Weight Distribution Shank part # C17100 which has a 2" drop for a trunnion system could be used on your SUV and the Curt Adjustable Weight Distribution Shank part # 17120 which has 5-3/4" drop (for a trunnion system) could be used on your truck. You don't need to match the brand of the shank to the weight distribution system.
I have attached a list of shank options for you below once you find out how much rise/drop you need.
