would these jacks be good on a 2010 starlite 34foot gooseneck with a 21000 lb rating?

Yes, the Pro Series Square Jack # PS1400950376 that you referenced would work great as it has a 10,000 lb capacity. Pin weight for gooseneck trailer is typically 20 percent total trailer weight. So yours being 21,000 lbs means you'd have a pin weight of right at 4,200 lbs which the Pro Series jack would have no problem with.
