If I buy a new 2 1/2inch inch shank will it work with the rest of my e2 setup I originally used with a 2inch reciever?

Yes. The 2-1/2 inch shanks like # EQ90-02-4700 or # EQ90-02-4900 will allow you to use the same Fastway e2 system. The shanks are not brand specific and are often interchangeable to meet your specific needs. I recommend the Equal-I-zer because they are connected with Fastway and this will work well for your 2-1/2 inch receiver. The shank replacement will be the only change necessary for that application.
