I cannot get the hitch to open enough to get a ball in the coupler. Atwood coupler stamped with 61101. Why is it stuck closed?

The number 61101 isn't actually the part number, but I believe you are looking at the Atwood 84132. If this coupler is not opening enough to engage the ball, the first thing to check is the trigger lock. If it is not disengaged, the ball will not fit. If it is seized up, you will want to use some lubricant spray to try to see if you can get the mechanism to function. Unfortunately we don't have the replacement parts for that linkage as Atwood has discontinued them.
If you need to replace it with the Titan Zinc-Plated Brake Actuator # T43397007K. This will replace your discontinued coupler and allow you the electric lockout for backing up to be added # T4748800.
