The Pro Series Adjustable 2-Ball Mount for 2" Hitches # 63071 referenced in your question does include the two different sized built-in hitch balls (2 inches and 2-5/16 inches). When using the 2-5/16 inch ball, this ball mount is rated at 14,000 pounds. This ball mount also has a maximum drop of 5-7/8 inches and maximum rise of 4-5/8 inches. I have attached a video review for you to check out.
If the trailer hitch receiver opening on your 2015 GMC Sierra 2500 is 2-1/2 inches, I recommend using the Curt Hitch Receiver Reducer Sleever # C45405. This will simply slide into your hitch and will allow you to use 2 inch towing and hitch-mounted accessories.
If you happen to have a 3 inch trailer hitch receiver opening on your Sierra 2500, I instead recommend the Buyer's Products Adapter # 337RTA302. This reduces the 3 inch hitch down to a standard 2 inch opening.
