I carry a 11 foot paddleboard on my rack. what is the preferred distance between the two cross bars?

There is no preferred crossbar spread listed for the paddleboard carriers we offer. They do however list the minimum crossbar spread at 24-inches.
This is the minimum distance needed for part # TH811XT and # Y04075. Both carriers have weight capacities and crossbar dimensions, so you want to make sure you select the right carrier that will work for you. If you want to let me know what roof rack system you are using I will be glad to make recommendations that will work.
