If you're trying to only replace the condenser units (rooftop unit) then you can easily swap out the old ones with # FR58PR if you have a 6-pin connector or the # FR42PV if you have a 9-pin connector. The connector I'm referring to is a wiring harness that runs from the condenser to the controller and looks like what I have pictured below. In this scenario you would still use your current air distribution boxes and thermostats to control the units. It's a lot easier to do but you would lose your heating function.
All of the units we carry just have multiple holes in the pan that allow it to drain out on the roof instead through a tube.
If you want to replace the entire system then you could use # FR55PV for the bedroom and # FR24FJ for the other two units. The single and dual units wouldn't communicate with each other but you'd have a completely new system in place that'll be much more efficient than your 20 year old system.
Neither of these units have a heating option so you would need to install the optional heat strip # FR27PR if you'd like to have a heat function. I do want to note that it isn't a replacement for a furnace but can help keep your motorhome warm.
It's common for the coils to get iced up on all units, as long as you properly install the probe properly in the coils it should sense when ice is building up and defrost the coils.
