Hi Steve!

In situations like this, I always recommend the Curt Adjustable Width Trailer Hitch Receiver for RVs # 13703. This will fit frames that are 22" to 72" wide and has a 350 pound tongue weight capacity and 3,500 pounds of towing capacity. It does require drilling for the install (as all these kinds of add on hitches will for a 5th wheel), but it tends to cover just about everything.

With that being said, it is always a good idea to measure the frame where this would mount to make sure it will fit. It can also sit fairly far back from the bumper/end of the 5th wheel (see included picture), so you may end up needing a relatively long ball mount. Not really an issue, just something to be aware of.

You will also need to get the Curt Powered Tail Light Converter w/ 4-Way Flat Trailer Connector and Install Kit # C59496 to power the boat trailer's lights. You would typically run the black power wire to a vehicle's battery, but it can be attached to any 12 volt battery and can be used on your 5th wheel.

It also doesn't hurt to double check and make sure you can tow a trailer behind your 5th wheel. It isn't legal everywhere, so if you haven't, definitely check.

What kind of fishing boat do you have? And where are you planning to take it next?
