What is the largest gauge wire I can feed through this?

I wouldn't go larger than 10 AWG with the Go Power Solar Cable Entry Plate for MC4 Cables # 34273840. The larger wire will just make sure that you are getting enough power to your entry plate from the solar panel.
I recommend going with an option that already has the power wires hooked up like # 34276245 for 7', # 34273841REVA for 10', or # 34273843REVA for 25'.
