There really is no elegant way to do it. The knob is held in place by a pal nut, which must be removed. It might be possible to get a screwdriver in next to the nut and pry it off, or grasp the end with pliers and rock it back and forth until it can be removed. However, I think your best bet would be to remove the entire handle from the jack and place it in a vise so the knob is facing downward. Give the underside of the knob a few whacks with a hammer. This will probably break the knob off, but you are replacing it anyway, and if the knob breaks off you will have better access to that pal nut.
