Do you make any stairs that would work with a cabover camper that needs stairs to get to a height of 53 that are fairly safe for older people?

The best option we currently offer to fit a 53" entry height is going to be the TorkLift GlowStep Stow N' Go Scissor Steps w/ Landing Gear # TLA7836. These steps come with adjustable landing gears so that you can adjust to uneven terrain and have a sturdy footing and prevent that wobbly feeling you can get with standard truck bed camper steps.
The TorkLift GlowGuide Handrail for Campers and RVs with GlowStep Scissor Steps # TLA7621 can be mounted to your steps/camper in order to also give you a sturdy handrail to grip onto while walking up or down the steps.
