The grease zerk fitting on your MORryde 3000 is M6 x 1.0 according to my contact at MORryde. To replace this you need the following part:

Replacement Brass Grease Zerk for Weld-On Hinges - # MA35ZR

This was designed for a weld-on hinge but since it matches your specs you can still use it!

In order to determine the torque rating for the lug nuts on your trailer you will need to know check out the chart I attached that shows all of the torque specs for all the trailer lugs available based on stud size, wheel material and wheel size.
