I am looking for a trailer hitch for my 2021 Honda CR-V non-Hybrid/Touring and see there are a lot of options. I really want a 2" receiver that is as hidden as possible. What options are there?

For your 2021 Honda CR-V there is quite a few trailer hitch receivers that fit the criteria you mentioned, the etrailer # e98848, the Curt # C13397, the Draw-Tite # DT79MR, and the EcoHitch # 306-X7345.
These hitches are really all pretty similar as they all have a hidden crosstube meaning once installed the only portion of the hitch that will be visible is the receiver itself, all of these hitches have roughly the same installation difficulty due to them being very similar in design, and all share the same 525lb tongue weight rating and 3,500lb trailer weight rating.
With that in mind I recommend the etrailer # e98848 due to it having a matte black powder coat finish to help it better blend in to the black plastic trim on your CR-V as you can see in the included picture, compared to the glossy finish on the other hitches.
If you will be towing a trailer with your CR-V you will also need a vehicle wiring harness # 118741, and a ball mount, hitch ball, and hitch pin and clip which can all be found in the etrailer Ball Mount Kit # 989900.
