In regard to MaxxFan Dome Plus Roof Vent w/ 12V Fan - LED Light - 6 Diameter - Manual Lift - White Item # MA00-03810W, how would I wire this to plug into a solar generator using either of these ports, USB-A Fast Charge x2, 5V DC, 9V DC, 12V DC, 2.4A, 28W Max, per port USB-C Output x2, 5V DC, 9V DC, 15V DC, 20V DC, 3A, 60W Max, per port?

You could run wiring in anyway that you like to a "solar generator" or power station, or other device or battery able to provide 12 volts at two amps. You would only need to attach an appropriate plug to match your device outlet.
If you would like to email me the brand and model number of your device I could advise what plug might be needed. Depending on how far away your device is, you may also need some additional cable like etrailer # 10-2-1.

I have a Bluetti 600 watt power station. I have installed a roof vent fan in a box trailer conversion. Question is: can I power the fan via the USB C 100 watt outlet? (It’s the last DC outlet available) Thank you in advance
