Question:
2012 Jayco eagle I would like to use this product on my fresh water tanks. They are the perfect size. There is metal strapping supporting the tank. Can this tank heater be installed between the support and tank? Or will the weight damage the heater?

You will not want to install a heater like the RV Holding Tank Heater # 372HTH-A between the metal straps supporting it and the tank as it can't be in contact with a conductive surface.
This heater is 30" long x 13" wide but there are other, smaller options that may work depending on the size of your tank. The ThermaHeat RV Holding Tank or Step Heater Pad with Thermostat # 277-000163 is 25" long x 7-1/4" wide and the ThermaHeat # 277-000164 is 18-1/4" long x 12" wide.

What if the pad is insulated from the metal conductive surface with non conductive ruber, foam, etc? To re-iterate the OPs concern. Will the weight of the tank pressing against the mounting straps cause damage; even if insulated with a soft material such as foam?
