We are using a mini fridge in our class b and wondering about what kind and size of an inverter.

The type of power inverter needed for a refrigerator would be pure wave. In regards to the correct size, this will come down to the starting amps/watts required for the refrigerator. The Everchill RV Mini Refrigerator part # 324-000109 for example which is one of the larger mini-refrigerators draws around 9 amps or 1,000 watts on startup so the Go Power Industrial Pure Sine Wave Power Inverter part # 34279950 would work for this and most others this size or smaller.
