Question:
Have a two axle 5th wheel. Axles are Dexter 8000 lb. There are double eye 7-leaf, 1-3/4 inch leaf springs on our rig. Having a difficult time locating replacement double eye 7-leaf 1-3/4 inch leaf springs that are rated 4000 lbs. Most all I see are 8 leaf, 2-inch. Maybe 7-inch, but they are 1-inch slipper on one end. Are identical replacements even available? Are the installed leaf springs actually 4000 lb rated?

Thank you for that detailed information and what I can tell you is that when choosing leaf springs, the actual number of leafs isn't the most important thing, the weight rating and center-eye to center-eye measurement is what you need to know. I have added a cut out from the help article on double eye trailer suspension which I highly recommend reading.
We do not carry double eye springs rated for 8,000 lb axles and there is no way for us to know the rating of your currently installed springs although I can tell you that it is pretty rare for axles with that high of a capacity to be double eye springs - slipper springs are generally used when you have axles rated so highly.
What you can do is measure your current springs from eye to eye and see if they match up to the 6-Leaf Double-Eye Spring for 7,000-lb Trailer Axles - 24-7/8" Long # e64SR. You can then compare this to your trailer's GVWR and use them if the GVWR is 14,000 lbs or less.
Like you said, we only have slipper springs rated for 8,000 lb axles, the 7-Leaf Slipper Spring w/ Hook End for 8,000-lb Trailer Axles - 26-5/8" Long # e37SR, and 6-Leaf Slipper Spring w/ Hook End for 8,000-lb Trailer Axles - 29-1/2" Long # e39SR.
These are 2" wide slipper springs so replacing your double-eye springs would require new suspension components such as a hanger kit. I have added a link to a help article on slipper spring suspension which I recommend checking out as well as a link to our selection of slipper spring hanger kits.
