I would like to add a hitch and 7 pin wiring to my 2015 Mercedes GLA250 to tow a small travel trailer. Mercedes does not offer/support this option in the US, only Europe, because of possible problems connecting into the vehicles electrical system. Any suggestions?

You certainly can add a hitch and wiring to your 2015 Mercedes GLA250. For a trailer hitch the most popular option is Curt hitch # C13197. This is a Class III hitch with a 2 inch receiver rated for 350 pounds tongue weight and 3,500 pounds gross trailer weight.
For wiring in order to add a 7-Way you will first have to install a 4-Way. The only harness available that does NOT require splicing into the vehicle wiring is the ZCI harness # 119250KIT. Then to add a 7-Way you will need # ETBC7. I have included some links that show and explain the ETBC7 installation for you.
I also recommend etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
