I have a 2015 Dodge 5.7 liter 4x4 quad cab. It has a 5’-6” bed. I shouldn’t need to make a complete 90deg. Turn with the trailer. Will it work with my goose neck ball in my truck? I have had adjustable air bags installed as well if that makes a difference but it shouldn’t. Thanks. Will the offset With a 5’-6” work to pull a 2001 cardinal 29’ 5th wheel camper?

The Convert-A-Ball Cushioned 5th-Wheel-to-Gooseneck Adapter w/ Offset - 12" to 16" Tall # CAB-C5GX1216 is not recommended for beds smaller than 6 foot by the manufacturer because of the turning radius. It does have an offset of 7-1/2 inches from ball to kingpin centers, so you will need to determine if you want to take that risk since you won't need to make a 90 degree turn.
The only gooseneck we have for your 5-1/2 foot bed with air suspension is the B&W # BWGNRK1309. So for your application, I recommend using the Curt X5 5th Wheel Base Rails Adapter for B&W Turnoverball Gooseneck Trailer Hitches # 16310 and a sliding 5th wheel hitch like # RP30051. This will still not give you 90 degree turning but will give you more clearance than the Convert-A-Ball Adapter.
The only completely safe recommendation for your truck and trailer clearance would be to remove the gooseneck hitch, add 5th wheel base rails, a fixed hitch, and a Sidewinder Pin box. That would move the pivot point of the trailer back 22 inches for appropriate turning clearance. I've linked those pages to assist.
