It's a weird little hatch. The box that is pictured it's for the release and it does not go all the way around the hitch

Thanks for the photo; it shows that what you have is the Ranch Hitch 5th-Wheel-to-Gooseneck Coupler Adapter # AM3100. Because this is an adapter I would not be able to guarantee that the Master Lock Coupler Lock # 2989AT would work for you as it has never been tested. Your best option to secure your trailer with this type of coupler is a wheel lock. I recommend checking out the EZ Trailer Wheel Lock # BLEZ-302 which fits 15" to 20" wheels or # BLEZ-300 for smaller 13" to 15" wheels. These locks are highly praised by our customers who have used them, with more than 400 reviews giving it nearly 5 out of 5 stars, as you can see on the product page. I've also added links to video reviews of these locks for you to check out.

The wider end of the Master Lock Universal Heavy-Duty Coupler Lock 2989AT is approximately 4 inches; overall this lock measures 12-1/4" long x 6-1/2" wide x 5-1/2" tall. I've added a couple video reviews of the lock for you to take a look at as well.

Is Blue lock tight recommend or discouraged for this install? For instance , on threaded cooler to adaptor threads and the lock bolts/ nut threads.

@WmW Typically you would not want to use loctite on the bolts for adapters like the Ranch Hitch # AM3100. Just torque them to spec and you will be good.
