The Hopkins Fold-Over Mounting Bracket # HM48595 that you referenced can't work with Curt harnesses like the part # C56040 or the T-One kit part # 118467 as it's a bit too small. You'd have to use the Hopkins wiring harness part # HM11143865 or use the bracket # 18144 with the Curt or Tow Ready.
